Nutrition - 4 x 500 kcal (50P, 30C, 20F) Ingredients - 100g spinach 500g potato 200g reduced fat feta 6 medium eggs 500ml egg whites 400ml semi skimmed milk 100g Parmesan Salt and pepper Method - 1. Add your spinach, potatoes and feta into a baking tray. 2. In a separate bowl mix your eggs, egg whites and milk. Season with salt and pepper. 3. Top with with shaved Parmesan 4. Place in the oven for 60 minutes at 180C for the eggs to cook fully. It should swell up a lot as it browns, that’s how you know the eggs are cooked. 5. Amber Bastian ANutr on Instagram: "Roasted veg and pesto slice 🍅 🌱 You will need… * 1 courgette, sliced * 200g cherry tomatoes * 2 red onions, cut into wedges * 2 bell peppers (whatever colour you like), sliced * Drizzle of EVOO * 2 heaped tsp italian seasoning * Handful of mixed herbs (parsley, dill, whatever you have) * 8 eggs * 100ml milk * 2-3 tbsp green pesto * 75g cheddar cheese, grated 1. Add all the vegetables to a large baking tray; drizzle with EVOO and add the Italian seasoning. Roast in the oven at 180C fan for 45 mins. 2. Add the roasted veg to a lined square baking tin; spread out evenly. 3. Whisk the eggs and milk together; pour over the vegetables. 4. Add spoons of pesto evenly on the top, and swirl to mix. 5.
