Ah a Sunday roast, the most quintessential British past time. A weekly ceremony consisting of devouring huge swathes of carbs. Here's my go to recipe for this wonderful tradition.

Ingredients

• 400 g Carrots

• 2 Carrots, Medium

• 1 Large Head Cauliflower

• 4 Cloves Garlic

• 1/2 Lemon, Medium

• 1 Onion, Medium

• 400 g Seasonal greens, Assorted

• 10 g Thyme, Fresh

Canned Goods

• 1 tbsp Tomato puree

• 500 ml Vegetable stock

Condiments

• 1/2 tsp Dijon mustard

• 2 1/2 tsp Marmite

• 1 1/2 tbsp Rose harissa

• 2 tbsp Soy sauce

Baking & Spices

• 2 tsp Baking powder

• 150 g Flour

• 1 tsp Paprika, Smoked

• 4 tbsp Plain flour

• 1 tsp Salt

• 1 tbsp Sugar

• 1 tsp Turmeric

Oils & Vinegars

• 1 tsp Apple cider vinegar

• 3 tbsp Olive oil

• 2 tbsp Red wine vinegar

• 6 tbsp Sunflower oil

Nuts & Seeds

• 1 tsp Cumin

• 250 ml Plant milk

• 90 ml Aquafaba

• 1.5 kg Potatoes (peeled and cut into even sized pieces (around 5cm/2inch in size))
