Smoking beets adds incredible flavor to this earthy root vegetable. The smoked beets are slowly smoked until tender, and then served with a creamy goat cheese ranch dip. This recipe was inspired by a restaurant dish I had at the Bird & The Bottle in Santa Rosa, California.

Ingredients

Produce

• 2 bunches Beets, fresh

• 1 tbsp Dill, fresh

• 1 Lemon, zest of small

• 1/4 cup Micro greens

Condiments

• 1 tbsp Lemon juice, freshly squeezed

Baking & Spices

• 1/4 tsp Finishing flaky salt

• 1/4 tsp Kosher salt

Oils & Vinegars

• 1 tbsp Olive oil, extra virgin

Nuts & Seeds

• 1 tbsp Pine nuts

Dairy

• 4 oz Goat cheese

• 2 tbsp Sour cream
