Ingredients: * 3-4 large yukon gold potatoes. * 3 tbsp melted butter. * 2 tbsp olive oil (a bit more for the pan and adding to the salmon). * Salt and pepper to taste. * labneh or créme fraîche to taste. * smoked salmon to taste. * chives to taste. * Black pepper. * 1 lemon (zest). Directions: 1. Grate your potatoes and squeeze out every last bit of moisture out of them using a kitchen towel (clean obvs) or cheesecloth. 2. Add the melted butter and olive oil to the potatoes and season. 3. Preheat a cast iron for 2 min on high. Add olive oil and the potatoes. 4. Gently press it with the spatula but don’t over press so they’re still fluffy. 5. Cook for about 12 m
