This is high in protein & the sauce is all made in a blender! 🌱 Ingredients: • 1 bunch raw beetroot (peeled) • 1 pack silken tofu (300g) • 2 tbsp olive oil • 1 clove garlic • 1 tsp smoked paprika • water • pinch salt & pepper • 300g pasta • handful pistachio nuts • handful fresh basil vegan parmesan 1. Blend the beetroot, tofu, oil, garlic, smoked paprika, with water (eyeball until desired consistency) & season to taste. • 2. Cook the pasta in salted water. Meanwhile toast the nuts and chop the basil. 3. Add the sauce to the cooked and drained pasta, mix well, and serve with the toasted pistachios, basil, and vegan parmesan.
