THAI RED CURRY NOODLE SOUP 
RECIPE 🍜👇🏼 

Per oven-proof glass bowl add:
100-150g chicken breast / plant alt (i.e tofu) 
1/2 tsp garlic, crushed
1/2 tsp ginger, minced
1 tsp soy (reduced salt)
OR ~1/2 tsp fish sauce 
1 tsp red curry paste 
1 tsp extra virgin olive oil 
1/4 cup reduced fat coconut milk 
1.5 cups reduced salt chicken stock
1 tbsp sliced onion (brown/ shallots) 
1-2 tbsp chopped herbs (I used coriander) 
1 lime wedge, whole + juice 
1-2 blocks rice noodles 
1-2 cups veggies of choice:
(capsicum, zucchini, breans or bok choy)
