I have no idea why these dainty little cakes are called Golden Bettys, although it could be due to the fact that they do bake to a lovely golden colour. I discovered this recipe in a very old cookbook called Farmhouse Fare, first published in the 1920's, and where all the recipes are sent in via Farmer’s Weekly, a British farming magazine.
