This luxurious one-pot chicken is inspired by a recipe I stumbled across in My Lisbon by Nuno Mendes. The braising sauce is rich with tomatoes, booze (port or brandy), and cured pork. I've streamlined the ingredients to better fit my pantry, but the luxurious character remains the same. Keep your sides simple so you can spoon the sauce liberally over everything. Roasted or boiled potatoes, polenta, or rice are all good options.
