Beefy and Cheesy Enchiladas Ingredients: 1 lb ground beef 1 yellow onion, diced 4 oz can green chiles 2 and 1/2 cup shredded Mexican cheese 1 can(10oz) red enchilada sauce 1/2 cup sour cream 1/2 tsp salt 1/2 tsp chili powder 1/2 tsp cumin 1/2 tsp garlic powder 1/4 tsp pepper 1/4 tsp paprika 10-12 corn tortillas In a skillet, add your ground beef, diced yellow onions, and seasonings. Cook 8-10 minutes until the ground beef is no longer pink and the onions are soft. Remove the skillet from heat and add the green chiles, about 1 and 1/2 cups of the shredded Mexican cheese(reserve the rest of the cheese for topping), and the sour cream. Mix together until combined and the cheese is melted. For the corn tortillas, they will need to be heated before filling them, or else they will crack
